What I love about being a herbalist is adding wild nutritious herbs into my meals. Making my favourite meals higher in Vitamins and minerals. This is a simple lunch idea that will keep you fuller for longer while also easy and quick to make.

Wild nettle & dandelion  omelette

I use 3 whole free range eggs for this but use what you normally would you use for an omelette. I add a drop of organic milk, Himalayan salt and pepper and stir. On my pan I add a drop of organic olive oil and lightly fry off my veg. I love
Tomatoes
Peppers
Onions
Mushrooms
Dandelion leaves
Nettle leaves

Dandelion and nettle grow in abundance in my garden and all over Ireland. If you are using them please pick from an unsprayed area and always only pick what you need. Use gloves for the nettle and cut the leaves from the stems. Add all of this to your pan. You can cut your dandelion leaves into smaller pieces. When your veg is ready, add your egg mixture, allow to cook for a few mins and then place under the grill to set the top. Add cheese or whatever toppings you enjoy, and your meal is ready. By adding wild herbs to your meal you are giving you body the extra added Vitamins and minerals the body needs.
Nettle contains 7-17% of your daily iron needs, Calcium, tone of protein, Vit A,C and D. String leave the plane once it is heated. Ask your granny about Nettles.
Dandelion is amazing digestive bitter. So many people are struggling with digestive issues these days and dandelion can improve you liver, kidneys and and pancreas health. It’s no surprise it’s called a p*ss in the bed. These are two amazing herbs to add to your diet.
